Cucumber/Vellarikkai Pachadi

Cucumber keeps the body cool and calm during hot summer. It quenches thirst and prevents us from sun-stroke, heat-stroke and allergy. This pachadi can be served with variety of dishes including mixed rice and north Indian roti.

Cucumber Pachadi

Ingredients:

Cucumber, grated/ chopped finely    –     1

Curd, whisked – 1 cup

Refined oil – 1/2 tsp

Green Chillies – 1 or as per your taste

Mustard seeds – 1/4 tsp

Green coriander chopped – few strings

Salt to taste

Method:

1. Heat the oil in a pan and sauté the mustard seeds and green chillies till they start spluttering.

2. Add salt to the curd and combine all the ingredients to the curd mixture.
